PREHEAT THE OVEN TO 180°C/350°F/GAS 4. Combine the sausage meat, onions, cinnamon, mushrooms and apples in a mixing bowl, then stuff this mixture into the cavity of the bird and secure with skewers or needle and thread.

PUT THE BIRD ON A RACK IN A ROASTING PAN, cover the breast with the bacon if using (otherwise reserve a little sliced onion to put over the breast), then sprinkle over the oil. Pour the cider and stock under and around the bird, then make a loose tent over it with foil to allow the bird to steam.
